老公仔豆腐 Hubby's Tofu

Ingredients (A):

3 tbsp soy sauce
1 tbsp sugar
1 clove garlic
rice wine vinegar
sesame oil

Other ingredients:

1 packet of chilled organic silken tofu
Plain flour
Salt
Pepper
Curry powder
Japanese sansyo pepper (green pepper)

Method:

1. Heat the oil in wok, deep enough to cover the surface of tofu cubes.
2. Remove tofu gently from its packaging. Cut tofu into thumb-sized cubes.
3. Place flour in a medium bowl. Add salt, pepper and curry powder into the flour. Stir to mix in the flour with a dry spoon.
4. Coat each tofu cube lightly with flour.
5. When oil is hot enough, slide the coated tofu in the wok to deep fry.
6. Remove tofu gently once it turns golden brown.
7. Springkle the surface with Japanese green pepper for extra flavour.
8. Serve immediately before tofu turns soggy.

For dipping sauce:

1. Combine ingredients (A) in a saucepan.
2. Boil for 20 seconds before placing it in a small bowl before serving.
